Leftover Delight


    At the end of last week I cooked a delicious Ham Steak with Brown Sugar, Pineapple, and Cherries. I had a couple slices leftover, and in my house, we're not big on just warming leftovers the way they are. We like to mix things up, and create a new meal from leftovers.

    Last night I did exactly that. I had 4 little potatoes that needed to be used before we head out of town this weekend. I had the ham, and a small amount of broccoli and cauliflower left that I wanted to avoid wasting. I also had half a container of sour cream and some Cheese-Whiz hanging out in the refrigerator door.

    4 potatoes
    Leftover Ham
    2 heaping spoonful's of Sour Cream
    2 heaping spoonful's of Cheese-Whiz
    A pinch of salt and pepper
    A dash (or two) of Cinnamon
    A dash (or two) of Cayenne Pepper

    This dish was delish and super easy. Here are the steps:
    1. Preheat oven to 375 and cook Potatoes.
    1. Cut meat into bite size pieces, and fry in skillet (about 10 minutes).
    2. Combine sour cream,cheese-whiz, salt, pepper, cinnamon, and cayenne into the potatoes.
    3. Mix meat in potatoes.

    <<You could actually serve the dish from this point, but I took a bit further. >>

    1. Stuff ramekin and bake for 15-20 minutes.
    2. Serve with sides.
MMM...MMM...MMM...Enjoy those leftovers.
